    Who's got a great chili recipe they'd like to share?

    Ragu Bolognese aka Sunday Gravy aka Meat Sauce?

    I'm looking for that PERFECT chili recipe and that PERFECT spahetti sauce recipe?

    I LOVE chili if it's made well and I HATE chili if it resembles a can of Hormel's!

    I've made a HUGE pot of meat sauce the last 4 weekends from various recipes...all of them were OK but nothing mouthwatering...nothing I'd make my permanent meat sauce recipe until the day I croak!

    Come on you guys: SHARE!

    Oh, and not too spicy - I like the emphasis on meat, beans and tomatos in my chili!

      I don't use recipes except when baking, but here is what generally goes in the chili pot.This is the basic, you can increase proportions of course.

      1 # ground chuck or meat loaf mix (veal.pork.beef)(venison)
      1 Large onion chopped coarse
      2-3 cloves of garlic mashed
      1 large can whole plum tomatoes
      1 can beans(kidney,pink,black)
      oregano, cummin,chile powder( i use a homemade mix),salt and pepper to taste

      Brown meat well, drain in colander the fat, set aside,saute onions in a little olive oil,add garlic and saute just for a few minutes, don't brown the garlic.Reintroduce the meat and add tomatoes (squish in hands but leave chunky)with juice,beans(rinsed) and spices.Add more liquid if needed,(beer works) simmer,taste ,adjust seasoning.Simmer ,eat over rice.

      In season, fresh tomatoes, pepper, can be added
      Also a dash of cocoa powder adds some depth to chili if you dare
      Dry beans are cheaper but who has time
      You can use any kind of meat,chopped by hand (make a chunkier batch) or ground
      Be careful, don't spread invasive species!!

        I like it.

        The only thing I can offer is; if you add a package of taco seasoning, or even sloppy joe mix to the ground beef, it really adds a lot of taste to a chili.

        Me, I love an extra meaty chilly, the spicier the better, with cubes of cheddar added when served.

          The Taco Seasoning Mix is also great in a Meat Loaf. It gives more of a ting to it, instead of that bland taste, Meat Loaf usually has. I should try it with Sloppy Joe Mix.

            This probably sounds really weird....but try a piece of dark chocolate or a tablespoon of cocoa powder in your chili......add a dimension that I can't quite describe (and don't knock it till you try it! My mom even likes it). - wait, chairrock said that.

            try it.

            one of the most interesting things that ever made it into chili was half a can of mountain dew. it (surprisingly) wasn't all that bad, but not good enough to make it my secret ingredient.

              Like Chairrock, I don't use a recipe and my basic recipe is similar. Here are the only real differences:

              fresh peppers:
              finely mince sweet green, poblano, and hungarian peppers
              use mayan (or texas) sweet onions

              I don't saute them, I sweat them on low heat until they begin to break down.

              I add the chili powder and cumin next and then cook the meat in this mixture. (I use the leanest I can find so I don't need to drain fat).

              I also use more cumin than most people do.

              Other than that it is basically the same.

              I know real texas chili fans will scoff at the idea of using beans and tomatoes.

              I'd like to see Hawks recipe.

                Mine is a trade secret, extracted after 2 days of torturing Mexican Raiders (Humanely of course). It's been in the family for more generations then anyone can remember. We believe it's the reason Creator gifted the Sioux with buffalo. I've had to modify it for beef and for caucasian palates.

                    From my mama the home economics teacher. Sorry, no measurements, its a semi secret recipe. I dont use very much tomatoes compared to most people.
                    like Sky, I sometimes add some dark chocolate to give it that Mexican mole flavor.
                    it aint healthy, but it sure is good.

                    start with good quality smoked bacon, minced. use plenty of it so you can reserve about 1/3 cup of fat.

                    mix the chili powder, a bit of flour, and spices (again, the exact mix is secret, but must include cumin and oregano) with half of the fat into a paste. use plenty of spices, dont skimp.

                    I use good quality meat, not cheap stew beef or ground beef. cut in 3/4 inch cubes, toss it in flour, brown it in small batches in some of the bacon grease. (small batches allow it to actually brown, and keep it from just boiling in its own juices).

                    fry up some diced onions lots of Garlic, and bell peppers and chiles (according to your pain tolerance.) over low heat until transparent. (dont brown them) this can take a while.

                    then add the meat, spice paste, a cup of diced tomatoes (canned is fine, especially in winter when good fresh tomatoes are hard to find), some beans (canned is fine, but make sure they're cooked), and enough broth to cover about half way.

                    put on low heat and simmer for at least 2 hours. a crock pot is even better. its actually better after sitting in the fridge for a day. the spices really permeate it.

                        Anyone have a green chile stew recipe? Had some in a dive in SanteFe a few years ago, was great!
